Housing and Food Services (HFS) is pleased to announce an opening for a Sous Chef at the Husky Den.HFS provides on-campus housing and dining to over 7,800 student residents each year. In order to successfully accomplish this, we employ over 1,200 classified, professional staff and student staff members who work throughout HFS, providing residential and dining services to the campus, as well as additional campus services such as the Husky Card (the campus ID card), conferences and catering. HFS staff members support the University's focus on the undergraduate experience through many programs and services—providing students a smooth transition to living on their own. The food court-style venue is home to eight different dining concepts, a convenience store and a variety of seating options. Each day, Husky Den's kitchens serve approximately 3,500 customers for breakfast and lunch. The Sous Chef position manages the culinary performance of a busy multi-venue kitchen. The position is supported a staff of prep cooks and student employees.Key Responsibilities
Directs food production and work assignments for kitchen staff.
Contributes culinary input and ideas that support growth and improvement at Husky Den.
Assists with hands-on training and mentorship of a diverse culinary team that includes classified and student staff of all levels.
Assists with cooking and production.
Creates and develops menus and original recipes.
Contributes an evolving knowledge of current industry trends applicable to the food service business.
Acts as a credible culinary resource for internal and external customers, solicits patrons' suggestions and responds to complaints, questions and special requests.
Participates in budgeting and monitors labor schedules and food costs.
Orders and directs storage of food and supplies and maintenance of equipment.
Ensures adherence to sanitation, safety and other food and kitchen safety programs.
Manages the monthly inventory for food service unit.Supervision Responsibilities
Supervises up to 10 classified staff and student production staff ranging in size from 20-60 people.Position ComplexitiesHusky Den is a large and highly visible dining venue at the University of Washington. High degrees of organization and coordination are needed to ensure that a variety of service needs are met to a diverse clientele. As with any food service business, the position will work a schedule to meet business needs.Working ConditionsThis is a professional staff position that is expected to have flexible availability, working schedules that are typical for a food service operation. The incumbent in this position is required to be present and visible during special University or HFS events that may occur in the evening and/or weekend.QualificationsBachelor's degree and a minimum of one year of kitchen management experience that demonstrates:
Applicable culinary depth and breadth
Experience executing various styles of cuisines while maintaining a high level of food, flavor and presentation quality
Exposure to menu development and management
Fiscal management experience
Proven time management skills while executing and directing food production
Ability to take and give direction
High volume production kitchen experience
Ability to work under high pressure environment
Excellent interpersonal, organizational analytical, written and verbal communication and problem solving skillsEquivalent education/experience will substitute for minimum qualifications.Desired Qualifications
